Ghostfish Brewing Company is a brewery with a mission: to elevate gluten-free beer to the forefront of craft brewing innovation. ?Its founders are acutely aware of how the craft brewing revolution has left gluten-intolerant drinkers behind because several of them and their loved ones are gluten-intolerant. Fate brought them together to make some deliciously delightful beers. This Seattle based brewery combines traditional brewing methods with non-traditional ingredients gluten-free ingredients to produce the Black Guardian Imperial Stout, Native Nectar Brown Ale, Defiance IPA and more. ?That?s right, these beers are made gluten-free from start to finish! 100% Gluten-Free. After winning second place in the Monfort College/UNC Entrepreneur Challenge(!!!), it was all hands on deck to cherry out the malting and roasting equipment and begin production. Grouse is up and running, 24/7. Yes, you heard me right, 24 hours a day, every day. This means a few things:

I should expect Nunn residents who are looking out for their neighborhood to come check in on the malt house at 3 am and ask, why, on earth, are you awake, singing Talking Heads tunes at the top of your lungs, and gleefully adjusting gismos and gadgets connected to a stainless steel tank?

Good bye day job, hello self-employment.

Most importantly, with each sleepless night, close quarters, or malting related heart-ache, I persist by remembering why it is I started this venture in the first place. This is not because I love a challenge or am a masochist (yes to the first, no to the later). This is Simon Sinek’s why. Grouse was founded because of the belief everyone should have access to variety of high-quality food and beverages regardless of allergies or intolerances. We’re here to help make that happen. Here’s to the battle cry to fulfill that why- Gluten-Free Malt or Bust!

Since the last blog post, we’ve been busy moving into our new location and setting up shop!!! Our designated gluten-free malting and roasting facility is almost complete and we are at the cusp of producing and selling malt. In fact, our pilot batch is germinating happily along in the malt house! Other exciting news, Grouse is one of the five finalists in the University of Northern Colorado’s 2013 Entrepreneur Challenge! The final event is this Thursday at UNC’s Colorado?s University Center in Greeley, CO. We will be presenting at 1:05 p.m. for the grand prize of $25,000 to help fund our goal of creating high-quality gluten-free malt. Here comes Grouse Co

It is true, there is a huge need for high-quality gluten-free beer on the market. So, naturally, I wanted to do something about it i.e. start a malting and brewing company. As it turns out, this is a pretty big endeavor 😉
So, it is time to change things up, do what I do best, and keep it simple!

Introducing… Grouse Malting and Roasting Company

Grouse will be focusing strictly on malting and roasting grain. Many of you have tasted our gluten-free brews and helped confirm the fact that great tasting gluten-free beer CAN be produced with the right ingredients. Please don’t lose faith in trying that beer again. We will be producing gluten-free malt and selling it to commercial breweries across the country, who will then brew up some delicious products for you to enjoy!

Now that we are focusing on malting and roasting, the game is afoot. New developments:

  1. We have a building!
  2. We’re obtaining equipment!
  3. We’ve got the right people on board and will be in production soon!

So please, PLEASE, stay tuned. I need your help to build this.
